Emberwood announces key team appointments ahead of its hugely anticipated opening this May

Emberwood, the new British brasserie set to open in the heart of Bath this May, is delighted to announce the appointment of David Hazell as Executive Head Chef and Sharky Patterson as Restaurant General Manager. With their extensive hospitality experience and a shared passion for ingredient-led cuisine, this dynamic duo will lead the Emberwood team in delivering an exceptional menu that pays homage to the rich agricultural heritage of Somerset and the South West. 

Located on Queen Square, Emberwood’s fresh dining concept will celebrate locally-grown and sourced produce, which will be prepared in full view of guests, from an open kitchen with a charcoal-fired open hearth. Partnering with trusted suppliers, the brasserie will offer a seasonal menu rich in premium ingredients, including heritage-bred meats from local farms including Lower Westcombe Farm, fresh Cornish seafood from Wings of St. Mawes and artisan dairy products from Wyke Farm. Sustainability and provenance are key pillars of David’s vision for Emberwood, reinforcing his dedication to responsible sourcing. 


David has a distinguished career in hospitality, refining his skills at acclaimed restaurants, including Bristol’s Clifton Lido and the Michelin-starred Paco Tapas, where he played a pivotal role in securing its prestigious accolade within just eight months of joining. His ethos centres on seasonality, bold flavours, and the art of cooking over fire, making him the ideal visionary for Emberwood’s immersive dining experience. 


David says of his appointment:

“I am thrilled to have joined Emberwood and I look forward to bringing a new menu to Bath. The dishes are a celebration of the local area, and we hope to become a must-visit for locals in the heart of the city.  My approach is all about simply enhancing the natural flavours of top-quality ingredients. Cooking over fire adds a unique depth and elevated flavour profile, and we are embracing this at Emberwood to create something truly special.”


Sharky Patterson has built an impressive career, spanning high-end restaurants, hotels, pubs, and clubs. His appreciation for food developed in his youth, influenced by his past experiences in France and the UK. Sharky is bringing his passion for opening new venues, developing a close team and building a strong guest first culture to Emberwood meaning locals and visitors to Bath can look forward to a truly memorable experience.
